This is a fun and creative way to dress up a cheeseboard. A simple cheeseball is transformed into an elegant presentation that will impress your friends and family alike! This is a great appetizer for Thanksgiving. If you don’t eat bacon, just eliminate it from the recipe.
INGREDIENTS:
1 8-ounce package cream cheese, room temperature
½ cup sour cream
2 tablespoons prepared horseradish, squeezed dry
1 cup finely shredded sharp cheddar cheese
2 scallions, finely sliced
6 slices bacon, cooked, drained and chopped
½ cup (about) Everything But the Bagel seasoning
1 small to medium fancy pumpkin or gourd (do not use pie pumpkins)
Crackers for serving
INSTRUCTIONS:
In a medium mixing bowl, blend the cream cheese until smooth, using a wooded spoon or rubber spatula.
Add the sour cream, horseradish, cheddar cheese, scallions and bacon. Form the mixture into a slightly flattened ball. Wrap in plastic wrap and chill for several hours or overnight. The ball will be soft.
Remove from the refrigerator. Roll the ball in the Everything But Bagel seasoning mix until it is well coated.
Using the handle of a wooden spoon or chopstick, form the ball, creating grooves, to resemble a real pumpkin.
Cut around the top of your pumpkin or gourd and remove the stem as if you were going to carve it. Clean the bottom of the stem and rinse in cold water. Pat dry and place the stem into the top of your cheeseball to create a real pumpkin look.
Serve with crackers and enjoy!
