WATERMELON FETA SKEWERS
½ seedless watermelon, cut into 1-inch cubes
3 ounces feta, sliced into 1-inch pieces about ¼ inch thick (should match the size of the watermelon)
20 small mint leaves
10 cherry tomatoes, halved
Juice of 1 lime
2 tablespoons olive oil
Maldon or Sea Salt
Salt and Pepper
20 small skewers
INSTRUCTIONS:
Place the watermelon in a small bowl and sprinkle with the lime juice. Place the feta pieces on a plate or baking sheet and sprinkle with salt and pepper and drizzle with the olive oil. To assemble, place one cube of watermelon on a work surface. Top with a piece of the feta followed by a whole mint leaf. Place the tomato half on top of the mint, cut side up. Secure with a skewer and place on serving platter. Lightly sprinkle each one with the sea or Maldon salt.
